Mothers Day Breakfast Recipes:Strawberry & cream sandwich sponge
Ingredients
225 g unsalted butter (at room temperature) , plus extra for greasing
225 g white caster sugar
1 teaspoon vanilla extract
4 large free-range eggs
225 g self-raising flour
1 teaspoon baking powder
1 splash of milk
FILLING
200 ml double cream 1 vanilla pod 1½ tablespoon of icing sugar , plus extra for dusting 250 g fresh strawberries
Method
- Preheat the oven to 180ºC/gas 4. Grease and line the bases of 2 round 20cm sandwich tins.
- Cube up the butter, then cream together with the sugar in a large mixing bowl until pale and fluffy. Mix in the vanilla extract.
- Beat the eggs, then gradually mix into the creamed butter and sugar. Sift, then fold in the flour, baking powder and ¼ of a teaspoon of sea salt with a large metal spoon until just incorporated (don’t overmix).
- Stir in 1 splash of milk to loosen the batter, then evenly divide it between the 2 cake tins.
- Bake the cakes in the oven for 22 to 25 minutes, or until golden and cooked through. To test, insert a skewer into the middle of a cake; it’s ready when the skewer comes out clean. Leave to cool in the tins for 5 minutes, then turn onto a wire rack to cool completely.
- Once completely cool, pour the cream into a large bowl, scrape in the vanilla seeds and whisk until you have soft peaks.
- Sift in icing sugar and gently fold through. Place one of the cakes on your chosen plate or cake stand and spread over the vanilla cream, but not right to the edges or it will spill later.
- Hull and roughly slice the strawberries, then scatter on top of the second cake. Dust with icing sugar and decorate with extra strawberries, if you like.
Mothers Day Brunch Recipes:Cheese Balls & Rava Palappam
Cheese Balls
Ingredients
1 cup: Cheese- grated ¼ cup: Refined flour 2 no: Eggs ¼ tsp: Chilli powder ½ tsp: Baking powder Oil for frying 1 tsp: Salt
Method
1.Mix all the ingredients except the oil and beat to a fluffy batter.
2.Rest in a cool place about 15 minutes.
3.Heat the oil and deep fry spoonfuls of the batter to a golden color, first at high then medium.
Rava Palappam
Ingredients
Semolina or Rava Fried to Brown Milk 1/2 litre Ghee Dry Grapes 150 gm Vanilla Essence 2 tsp Sugar – to taste
Method
1. Boil the Milk and add sugar in it.
2. When milk boils add Rava or Semolina and grapes.
3. Stir to get a pasty level.
4. Add Ghee – 1 teaspoon.
5. Cut off heat.
6. Now, paste Ghee in a flat vessel. Level some sugar on bottom.
7. Pour the content to the flat vessel and flatten.
8. Add Vanilla essence.
9. Again put some ghee and sugar on top.
10. Allow to cool and freeze.
11. When chilled cut to slices and serve.
12. Rava Palappam is ready.
Mothers Day Dinner Recipes:Marinated and grilled salmon
Ingredients
2 sticks fresh lemon grass
½ small bottle low-salt dark soy sauce
1 bunch fresh coriander , stalks finely sliced, leaves reserved
1 thumb-sized piece fresh ginger , finely grated
4 cloves garlic , finely grated
1 large salmon fillet , (about 1kg), from sustainable sources, ask your fishmonger, scaled and pin-boned
4 tablespoons runny honey
2 red chillies , deseeded and finely sliced
4 spring onions , finely sliced 2 limes
Method
- Bash up your lemon grass and mix it with the soy sauce, coriander stalks, ginger and garlic then rub all over the salmon fillet. Leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with cling film.
- Preheat your grill to its highest setting. When you’re ready to cook the salmon, remove it from the marinade, brush with honey and grill for 10 minutes.
- Fork up the cooked salmon a little so everyone can see the lovely, dark, sticky outside and the juicy, pink fish underneath. Serve sprinkled with the chillies, spring onions, reserved coriander leaves, then squeeze over the lime.
