Best Father’s Day Gift

Father’s Day is celebrated worldwide to recognize the contribution that fathers and father figures make to the lives of their children. This day is a celebration honoring fathers and celebrating fatherhood. Father’s Day in 2017 is on Sunday, the 18th of June. Shopping for your dad can be frustrating. When it comes to getting him any sort of gift, your conversation probably goes something like this: “Dad, what do you want for Father’s Day?” “I don’t know. You don’t have to get me anything.” If you aren’t sure what to get him this year, you’ve found the right guide.

Dad’s Chicken and Rice

This easy chicken and rice recipe, flavored with onions, peppers, and tomatoes, may be increased or decreased quite easily. We should also note that it’s likely you’ll find yourself fighting for the crunchy crust (the Spanish call it soccarat) that ideally forms on the bottom of the pan.

Ingredients

1 cup olive oil (approximately), divided , 2 small onions, diced, 3/4 cup flour,

3 pounds boneless, skinless chicken breasts, cut into 2-inch pieces ,

4 jalapeno peppers, minced, 2 14.5-ounce cans chicken broth, 1 green pepper,

3-1/2 cups rice (approximately), 3 small tomatoes, cut into 8 wedges each

 

Directions

In a large, heavy-bottomed soup pot (cast iron works well) over medium heat, add 1/4 cup olive oil and cook onions until softened. Remove onions from pan and reserve.

Place flour and chicken in a large paper bag and shake gently to coat chicken with flour. Raise heat to medium-high. Shake excess flour from chicken, and cook in pot in batches, adding more oil as needed (it may get quite dark, and that’s okay), until well browned on all sides. Then remove chicken to a plate. Stir in jalapenos and cook 1 minute.

Add reserved cooked onions and chicken back to pot. Add chicken broth, saving one empty can. Add 2 cans’ worth of water. Bring to a boil; then lower to a simmer. Cover and cook 25 minutes.

Slice top and bottom off green pepper. Carefully run a knife in a circular motion around the inside to remove white membrane and seeds (be careful not to puncture the pepper). Slice into thin rounds.

Add rice to pot, stirring well. Cover and cook 10 minutes. Layer pepper slices in a decorative pattern over mixture in pot, and top with tomatoes. Cover and cook 10 minutes more. Remove from heat and let sit 10 minutes before serving.

Dad’s Meat Loaf

Ingredients

1 pound ground beef        1 pound ground pork  2 eggs

1/2 cup chopped onion    1/2 cup Italian bread crumbs

1/2 cup ketchup, divided  1 teaspoon Worcestershire sauce

1/2 teaspoon salt  1/2 teaspoon black pepper   1 tablespoon light brown sugar

Directions

Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.

In a large bowl, combine beef, pork, onion, bread crumbs, eggs, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper; mix well. Press mixture into prepared pan.

In a small bowl, combine remaining ketchup and brown sugar; brush over meat loaf.

Bake 1 to 1-1/4 hours, or until juices run clear. Allow to sit 5 minutes, then slice and serve.

BAKED FISH (DAD’S CATCH)

Ingredients                                                                                                               4-6 (6-ounce) fillets, skins removed, 4-6 ounces lemon juice, 2 eggs, beaten, 1 cup milk, 1 package Ritz Crackers (Roasted Vegetable) crushed, 1 package Nabisco original premium saltine crackers, crushed, 1 teaspoon parsley, 1/4-1/2 teaspoon of grounded Cayenne Pepper(according to taste), 1/4-1/2 teaspoon Morton Nature’s Seasons (Seasoning Blend), 1/4-1/2 teaspoon garlic powder, 1 tablespoon grated Parmesan Cheese

Directions

Preheat oven to 375 degrees F. Remove skins and rinse fillets, pat dry with paper towel, place skinned fish in a medium glass bowl with lemon juice for about 15 minutes, turning once. In another medium bowl beat together eggs and milk. *Crush the crackers and combine with the rest of the ingredients, mix well. Place in a medium bowl or container. Remove fillets from juice, place in egg and milk mixture, turning a few times. Take from milk mixture and lay in cracker mixture turning and patting on crackers until completed covered. Spray a 9×12” roasting/cake pan with original or butter flavored PAM cooking spray. Place fillets in pan and bake uncovered. Bake 35 to 45 minutes, or until easily flaked with a fork.
